Boiled eggs with avocado on toast



  • 2 eggs 
  • 1/2 avocado 
  • 1 slice gluten free seeded bread 


  1. Boil a pot of water 
  2. Once the water is boiling add the eggs 
  3. Boil for 6 - 8 minutes 
  4. In the mean time toast the bread 
  5. Mash the avocado with a fork 
  6. Remove the eggs from the water and rinse under cold water
  7. Remove the shell and slice in half 
  8. Serve, place the avocado on the toast and the halved eggs on top
  9. Season with salt and pepper
