Avocado baked eggs

 

Ingredients 

  • 1 avocado, halved  
  • 2 eggs 
  • Fresh chilli 
  • salt and pepper 

Method 

  1. Preheat the oven 200°C
  2. Halve the avocado and remove the pip
  3. With a tsp remove some avocado to create a large whole for the eggs 
  4. Place the halved avocados in a backing tray, ensure they can not tip over 
  5. Crack the eggs into the avocado, use small eggs 
  6. Bake for 10-15 minutes until the white is cooked through 
  7. Remove from the oven and top with chilli and salt and pepper 
  8. Optional to serve with mushrooms and bacon
