Baked Eggs

 

Ingredients 

  • 2 egg
  • 200g fresh or can diced tomato
  • 200g cannellini beans (white kidney beans), rinsed (remove for lowFODMAP)
  • olive oil 
  • 1 tsp paprika 
  • 1 tsp chilli flakes 
  • 1/2 tsp cumin  
  • salt and pepper

Method

  1. Preheat the oven to 200°C
  2. Heat a pot on medium 
  3. Add the oil, spices, tomatos and beans 
  4. Combine well to ensure all spices are evenly throughout the sauce 
  5. Simmer until thickens for approximately 15 minutes 
  6. Divide the sauce into separate single serving dishes
  7. Using a spoon, create a spot for the egg to go
  8. Crack the egg into the sauce 
  9. Place in the oven under the grill and cook for 6 minutes
