Vanilla and Coconut Chia Pudding

Vanilla and Coconut Chia Pudding - gluten free - lactose free


4 tbsp chia seeds
1/2 cup coconut milk unsweetened (not from a tin)
1 tsp Vanilla essence
2 tsp desiccated coconut or coconut flakes
1 banana, thinly sliced 


Combine the chia seeds, vanilla essence and coconut milk in a container with a lid, jars are great.
Shake well every 30 seconds or 1 minute until the chia seeds are expanding and no longer settling on the bottom

Add the coconut and combine well. 

Add the sliced banana and gently fold through

Place container in the fridge for about 20minutes.

Remove and enjoy
