Fish Curry



  • 2 white fish fillets, cut into small pieces  
  • 600-800ml coconut milk
  • small broccoli, chopped
  • small sweet potato, peeling and cut into small chuncks
  • knob ginger, grated
  • 2 tbsp red curry paste
  • ½  cup quinoa, wash well



  1. Heat a large pot with oil and add the ginger, cook and stir on medium heat for 1 minute
  2. Add the curry paste and continue to cook for 1 -2 minutes
  3. Stir in the coconut milk
  4. Bring to boil and reduce to simmer for 3 minutes
  5. Add the sweet potato and cook for 10 minutes
  6. Add the fish and broccoli, cook for 8 – 10 minutes
  7. In the mean-time add the quinoa and 1 cup of water to a pot, simmer until all the water is absorbed.
