Pesto Salmon



  • 2 salmon fillets 
  • 1/2 zucchini, sliced 
  • 1/2 cup quinoa
  • 1 tbsp Pesto (refer to pesto recipe) 


  1. Rinse the quinoa well under cold water using a sieve 
  2. Add the quinoa and 1 cup of water to a pot
  3. Bring to boil and simmer 
  4. Simmer for 10-15 minutes until water is absorbed and quinoa has expanded 
  5. In the mean time, preheat a frypan with oil medium to high 
  6. Spread half the pesto sauce on the skin of the salmon 
  7. Cook the salmon with skin facing down for 5 minutes
  8. Turn and cook for another 2-3 minutes 
  9. Once the quinoa is cooked, spoon the remaining pesto through the quinoa
