Ricotta Gnocchi



  • 250g ricotta 
  • 2 eggs 
  • 1/2 cup parmesan, grated 
  • 1 cup brown rice flour 


  1. Drain excess water from ricotta 
  2. Add the ricotta, eggs and parmesan to a large glass bowl
  3. Add the flour 
  4. Combine well to form a dough constancy 
  5. Add extra flour if it is too sticky
  6. Sprinkle some flour onto a dry flat surface 
  7. divide the dough into quarters 
  8. Roll into thin logs on the flat surface 
  9. Logs should be about 2cm in thickness (diameter) 
  10. Cut into small pieces to form squares 
  11. Gently press down on the gnocchi with the back of the fork 
  12. Continue until all the gnocchi is completed 
  13. Heat a large pot of water 
  14. Place the gnocchi in simmering water
  15. Once the gnocchi floats to the top remove the gnocchi and place on a plate
