Smashed sweet potato with a twist

 

Ingredients 

1 medium sweet potato, roughly cut into 2cm pieces
1 - 2 tbsp unroasted dukkah, refere to recipe on Gourmet Intolerance
1 tbsp olive oil 

Method

Preheat the oven too 220°C
Line a baking tray with baking paper
Cut the sweet potato into 2cm pieces
Boil the sweet potato until slightly softened, this will also speed up the baking
Evenly spread the sweet potato in the baking tray
Using a fork, gently press down on the sweet potato to create a smashed look
Sprinkle the dukkah over the sweet potato
Drizzle olive oil over the top
Bake for 30 minutes until crispy and golden browned
