One Pot Fish Curry Soup



1 medium sweet potato, peeled and cut into small pieces
1/4 cauliflower, cut into small pieces
400ml coconut milk
2 tsp red curry paste
1 knob ginger, peeled and sliced
250g white boneless fish fillet, cut into small piece
Chilli, optional  


Place the sweet potato and coconut milk into a large pot.
Bring to boil and simmer
Add the ginger
Cook until the sweet potato is soft
Add the red curry paste
Blend to form a smooth soup consistency
Add approximately cup of water so it is not too thick. Add extra water for preferred consistency
Blend again until smooth
Add the and cauliflower
Continue simmering until fish and cauliflower is cook
Season to taste
