COCONUT FISH BITES

Ingredients

  • 2 white fish fillet, cut into small pieces 
  • 1 cup desiccated coconut 
  • ½ lemon juice 
  • 2 tbs extra virgin olive oil or coconut oil 

Method

  1. Preheat the oven to 180C
  2. Cut the fish into smaller finger pieces
  3. Add all the remaining ingredients to a large bowl. 
  4. Combine well
  5. Add the fish pieces to the coconut mixture, toss through, ensuring they are completely covered
  6. Line a baking tray with baking paper 
  7. Place the fish on the paper and bake until fish is browned and crisp
