Vegetarian Rice Paper Rolls
2 rice paper sheets
1/4 carrot, cut into thin sticks
1/2 avocado, finely sliced
1 egg, cooked like an omelet
1/4 cup lettuce, thinly shredded
1/4 cup red cabbage, thinly shredded
Prepare all the ingredients, carrot, avocado, lettuce and cabbage and set aside.
Heat a frypan and add some oil. Crack an egg into the pan, using a spatular mix the egg.
Cook the egg like an omelet. Wait until the egg is cooked on one side before flipping and cooking the other side.
Remove the egg from the pan and thinly slice into strips.
In a large bowl add warm water.
Add one rice paper sheet into the warm water for 10 - 20 seconds.
Once the paper is entirely soft, remove from the water and pat dry on paper towel.
Place the paper on a clean plate, add the to toppings in the middle.
Wrap the paper by folding sides in and roll tightly
