Gluten Free Sushi

Gluten free sushi


1 Nori sushi sheet
2 tbsp cooked quinoa
1 heaped tsp whole egg mayonnaise (optional to swap with avocado or lactose free mayonnaise)
2 carrot sticks 2cm length by 1/2cm width (optional)
1/4 avocado
1 tbsp lettuce
Optional to add tuna in springwater, water drained


Cook and cool the quinoa
Place the Nori sheet shiny side down on a clean dry flat surface, or a sushi rolling mat
Mix the mayonnaise through the quinoa in a separate bowl
Evenly spread the quinoa and mayonnaise over the sushi sheet, leaving a small border around the edges
At the top edge closest to you place the carrot, avocado and lettuce in a row
Roll firmly away from you enclosing the ingredients
Cut into desirable size
