Banana Bread - Ideal for lunch boxes

Dairy free Banana bread


4 ripe bananas
2 eggs
1 tbsp raw honey or maple syrup
2 tsp vanilla extract
1/2 cup gluten free flour
1 cup of LSA meal (linseed, sunflower seeds and almonds) or Flaxseed meal only for nut free
1 cup potato starch flour
2 tsp baking powder 


Preheat the oven on 180 degrees
Add 4 bananas to a food processor or thermo mix
Blend bananas for 10 - 20 seconds on moderate speed
Add the eggs, vanilla extract and honey, blend for another 20 seconds until well combined
Add the flours and baking powder, blend for 30 seconds or until well combined
Line the loaf tin with baking paper and pour mixture in
Bake in the oven for 40 - 50 minutes. Consistency should be fluffy but slightly moist with a crispy crust
