Warm chicken Salad

 

Ingredients 

  • 2 chicken fillets, skin removed and sliced 
  • 2/3 cup cherry tomatoes, sliced in half 
  • 1/2 avocado, thinly sliced 
  • 1 baby cos lettuce or 1 cup rocket 
  • 1/4 red onion, thinly sliced 
  • 1/2 tsp cumin 
  • 1 tsp paprika
  • 1 tsp turmeric 
  • 1/2 tsp garlic powder 
  • 1/4 tsp cayenne pepper
  • 2 tbsp olive oil  
  • 1 lemon juice 

Method

  1. Slice the chicken in to preferred sizes 
  2. Add all the spices to a large bowl, combine well
  3. Add the chicken to the spice mix 
  4. Rub the spices into the chicken with your hands 
  5. Heat a nonstick pan with 1 tbsp oil on medium
  6. Add the chicken and any remaining spices to the frypan 
  7. Cook the chicken until browned and cooked through 
  8. Meanwhile prepare the salad 
  9. Add all the salad ingredients to a large bowl
  10. Top with the remaining olive oil and lemon juice, combine well 
  11. Divide the salad into serving bowls, top with cooked chicken and season with salt and pepper
