Tuna WITH QUINOA AND VEGETABLE SALAD

 

Ingredients

  • 1 cup quinoa, cooked 
  • 1/2 avocado, thinly sliced 
  • 1/4 cup red cabbage, thinly sliced 
  • 2cm cucumber, thinly sliced 
  • 1 tomato, diced 
  • 1/4 cup edamame 
  • 1 tuna fillet
  • 1 tbsp olive oil 
  • 1 lemon juice 
  • 1/2 tbsp tamari 
  • 1/2 tsp wasabi 

Method

  1. Cook quinoa. Add 1/2 cup quinoa to 1 cup of water. Bring to boil, then simmer until all water is absorbed 
  2. Heat oil in a panfry on medium. Add the tuna and cook for 3 minutes on one side and 2 minutes on the following side. The tuna will be medium-rare. Cook for longer if you prefer well cooked tuna
  3. In a small bowel combine the tamari, lemon juice and wasabi until smooth
  4. In the meantime prepare all ingredients
  5. Add the cooked quinoa to a serving bowel, top with all additional ingredients and sauce
