SUPER CHARGE DIGESTIVE SALAD

 

Ingredients

  • Bunch kale, roughly chopped 
  • 1/2 avocado, thinly sliced 
  • 3cm cucumber, thinly sliced 
  • 1 carrot, grated 
  • 2 tbsp sauerkraut 
  • 1 tbsp pumpkin seeds 
  • 1 tbsp walnuts 
  • 1 tbsp almonds 
  • 2 tbsp extra virgin olive oil 
  • 1 lemon juice 
  • 1 tsp paprika 
  • 1/2 tsp cayenne pepper 
  • 1/2 cup quinoa, cooked (optional) 

Method

  1. Add all ingredients to a serving plate
  2. Top with olive oil, lemon juice and spices
